Acorn Squash with Apple & Sausage filling
4 Acorn squash, cut in half and seeds removed
4 tart apples, peeled and sliced
1/2 lb ground sausage
1 small onion, chopped
2 tsp lemon juice
3/4 cup brown sugar
6 tbsp. butter
salt and fresh ground pepper to taste
Preheat oven to 350 degrees
Place squash, cut side down in a buttered baking dish, cook for 35 mins.
Brown crumbled sausage and saute chopped onion
Combine apples, lemon juice, brown sugar.
Turn baked squash over and sprinkle with salt and pepper.
Fill with Apple mixture, place butter on top.
Return to oven and bake for 25 mins.
